gluten-free vanilla waffles
I don’t make waffles often, but when I do, I make a large batch and freeze them so that my kids can come home from school and pop one into the toaster for an after school snack! I did that when I was a kid, although I don’t want to think about what was in those frozen waffles I ate.
These waffles, on the other hand, are gluten-free, sweetened with apple sauce and flavored with a hint of vanilla! They are easy to whip up, and I definitely recommend doubling this recipe and enjoying them all season long!
Ingredients:
1 ½ cups oat flour
2 teaspoons baking powder
½ teaspoon salt
½ teaspoon cinnamon (optional)
½ cup unsweetened applesauce
1 cup milk of choice (dairy or non-dairy)
1 tablespoon melted coconut oil or unsalted grass-fed butter
2 large eggs
1 tablespoon vanilla extract
Instructions:
In a large bowl, whisk together oat flour, baking powder, salt, and cinnamon.
In another bowl, mix the applesauce, milk, melted coconut oil or butter, eggs, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly lumpy.
Let the batter rest for 10 minutes to thicken and for the oat flour to absorb moisture. (add more milk if it needs to be thinner)
Preheat and lightly grease your waffle iron.
Pour batter onto the waffle iron, spreading evenly.
Cook until the waffles are golden and crisp, about 4-6 minutes depending on your waffle iron.
Remove waffles and serve warm with your favorite toppings.
Make a double batch and store in the freezer!

6 cups oat flour
8 teaspoons baking powder
2 teaspoons salt
2 teaspoons cinnamon (optional)
How to Use:
Store this dry mix in an airtight container at room temperature.
When ready to make waffles, for each batch use about 1 ½ cups of the dry mix.
Add per batch:
½ cup unsweetened applesauce
½ cup milk of choice
1 tablespoon melted coconut oil or butter
2 large eggs
1 teaspoon vanilla extract
Mix wet ingredients with the dry premix and cook waffles as usual.
