Honey-sweetened Flakey einkorn flour biscuits
One of the best things in the world is walking into a home and smelling the aroma of fresh bread baking in the oven.
When kids come home starving from activities and school, they are searching in desperation for something to eat. I love these biscuits because they are super versatile - they are great for an on-the-go breakfast, a side to a main meal, or a quick afternoon snack.
Made with einkorn flour, butter, and milk - these flakey biscuits create the perfect blend of carbs, protein, and fat! Load it up with more butter, pop it in your mouth for a delicious snack!
It takes only a few minutes to throw these together and are the perfect addition to a bowl of soup or a quick breakfast on the go! We even throw them on top of my chicken pot pie filling.
Why Einkorn Flour?
I have been eating gluten-free for many years now because eating gluten causes me to get hives and eczema. However, I am able to eat einkorn flour. It has a different structure than regular whole wheat or all-purpose flour. If you are curious and want to learn more about einkorn flour, read this.
Ingredients:
2 cups all purpose einkorn
1 tablespoon baking powder
1/2 teaspoon sea salt
1/4 cup grass-fed butter
2/3 cups whole milk (preferably raw)
1 tablespoon raw honey
Directions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a food processor, combine einkorn flour, baking powder, and salt; pulse to mix.
Add cold butter, cut into small cubes, and pulse until the mixture resembles coarse crumbs.
Drizzle in raw honey and milk, pulsing just until the dough comes together (do not overmix).
Transfer the dough to a lightly floured countertop and gently roll it out to about ½-inch thick.
Use a glass to cut the dough into circles, gathering scraps and re-rolling as needed.
Place the biscuits on the prepared baking sheet and brush the tops lightly with milk.
Bake for 15–20 minutes, or until the tops are lightly golden brown.
Cool slightly before serving warm with butter or as a side to your meal.
