healing ancestral soup
Soup is my comfort food.
As I have mentioned before, I am still very much on my own journey towards health and balance. Those months of chemotherapy and radiation took a toll of my body and some of the damage is irreversible. There are times when I feel strong and energetic and of course, there are horrible flares when I can’t leave the house. Recently I had to take antibiotics for an infection I just couldn’t beat, After a childhood filled with constant rounds of antibiotics, I try so hard to not take antibiotics, but sometimes, I find myself out of choices. I made this soup out of desperation as I didn’t have any leftover dinner for lunch and I was starving.
This soup started as a “clean out the fridge” type of lunch that turned into something deeply healing and comforting—a reminder that nourishment doesn’t have to be complicated.
Lately at our Whole Foods, they have been selling grass-fed meat with animal organs already added. The company is called Force of Nature and in my store, it is found in a separate, stand alone freezer. You can also order straight from their website.
If you haven’t tried organ meats yet, you are missing a powerful superfood. When looking to buy organ meats, try to choose meats from grass-fed, pasture-raised animals. There are many companies that sell them, my biggest tip is to buy it mixed in with ground beef. You can find these products at Force of Nature and Us Wellness Meats.
What are organ meats?"
Organ meats, also called offal, are some of the most nutrient-dense foods available, and are full of vitamins and minerals are are typically lacking in those muscle meats we are accustomed to eating. Historically, organ meats were prized parts of the animal used fully along with bones and other parts for broth. Today, they are not as popular due to their strong flavor and the “ick” factor. However, they are extremely nutritious and they deserve an important place in our diet.
Each organ offers unique benefits:
- Liver is rich in vitamins A, D, E, K, B12, folate, copper, and iron, supporting liver detoxification and hormone balance.
- Heart provides protein, B vitamins, iron, and CoQ10, which supports cardiovascular and cellular health.
- Kidney is high in B vitamins, iron, zinc, copper, selenium, and folate, aiding blood cell production and immune function. (source)
So back to my soup!
Finding ways to incorporate organ meats into my diet is not easy, but I have discovered some tricks to make it simple and delicious! One of them is SOUP!
My Healing Ancestral Soup is filled with organ meats, grass-fed ground beef, onions, carrots, celery and a few slices of ginger and garlic. Each ingredient adds valuable vitamins and health benefits to your broth. In addition to the organ meats, the softened vegetables and bone broth, make this soup easily digestible and soothing to the digestive tract.
When I am on antibiotics, I don’t want to add any extra irritation to my gut. Adding in that ginger provides vitamin C, B6, potassium, magnesium, and antioxidants that calm inflammation and aid digestion while garlic adds vitamin C, B6, manganese, selenium, and sulfur compounds like allicin, which boost immunity and fight bacteria. Together, they not only enhance flavor but also support your immune system and gut health.
Ingredients:
6 cups bone broth (chicken or beef)
ground beef with added organ meats
1 medium onion
2 large carrots or 3 medium carrots, chopped
2 celery stalks, chopped
1 inch raw ginger
2 cloves fresh garlic
handful of parsley
sea salt and black pepper to taste
