A simple no-bake chocolate coconut snack naturally sweetened with raw honey
So often my kids rummage through my cabinets searching for something sweet - we all need something sweet once in a while! These coconut-cacao bites are the perfect combination of sweet and chewy. The coconut offers a fiber-rich base while the chocolate topping gives the perfect rich sweetness. And don’t forget that eating some healthy fat along with the fiber and sugar is helpful as it will keep you full longer and help slow down the digestion of carbs. While they taste indulgent, this no-bake treat can be easily thrown together and enjoyed without guilt.
ingredients:
Coconut layer:
1 cup unsweetened shredded coconut
¼ cup coconut flour
¼ teaspoon sea salt
2 tablespoons raw honey
1 teaspoon vanilla extract
¼ cup coconut oil
Chocolate layer:
½ cup raw cacao powder
⅓ melted coconut oil
¼ cup raw honey
¼ teaspoon sea salt
1 teaspoon vanilla extract

Make coconut layer:
Melt the coconut oil gently in a pot until fully liquid.
Line an 8x8-inch baking pan with parchment paper, letting it overhang the edges.
In a bowl, mix the shredded coconut, coconut flour, sea salt, honey, vanilla, and melted coconut oil until fully combined.
Let the mixture sit for 5 minutes to absorb the liquid.
Press the mixture firmly into the prepared pan, using the back of a spoon or your hands.
Make chocolate sauce:
In a small pot, gently melt the coconut oil until warm.
Whisk in the cacao powder, raw honey, salt, and vanilla.
Pour over the pressed coconut layer and spread out evenly.
Combine ingredients:
Place in the refrigerator for atleast an hour or until hardened.
Cut into 16 squares. Store in the refrigerator.
